- 1 cup black beans, cooked
- 1/4 cup red and green bell peppers, diced fine
- 1/4 cup onion, diced fine
- 1 each jalapeno, diced fine
- 1 cup tomato, diced
- 1/2 cup cilantro, minced
- 1/4 cup lime juice
- 1/4 cup V-8® vegetable juice
Mix all ingredients. Chill.
