White Bean Chili

This recipe was featured at the recent 5K Run in the Lehigh Valley!

A creamy turkey, cannellini bean and jack cheese soup seasoned with green chiles and cumin.

Portion Size: 6 oz. Ladle

Ingredients 1.1 Gallon

Reduced Fat 2% Milk SCALDED 2 qts. + ½ cup 1 gal + 1 cup 2 gal
Vegetable Salad Oil 1 tsp 2 1/8 tsp 1 TBSP + 1¼ tsp
Ground Turkey, Raw 1 lb + ½ oz 2 lbs + 1 oz 4 lbs + 2 oz
Yellow Onions, Fresh DICED ¼” 12 ½ oz 1 lb + 9 oz 3 lbs. + 2 oz
Garlic, Fresh CHOPPED 1 tsp 2 1/8 tsp 1 TBSP + 1¼ tsp
Diced Green Chiles, Canned ½ cup + 1 tsp 1 Cup + 1 TBSP 1 Pint
Ground Cumin 3 tsp 2 TBSP + ¼ tsp ¼ cup + ½ tsp
Oregano Leaves, Dried 1 tsp 2 1/8 tsp 1 TBSP + 1¼ tsp
Cayenne Pepper ¼ tsp ½ tsp 1 tsp
Ground Cloves ¼ tsp ½ tsp 1 tsp
Jalapeno Peppers, Fresh CHOPPED ¼ cup + ½ tsp ½ cup + 1 tsp 1 cup + 1 TBSP
Cannellini Beans, Canned,
RINSED & DRAINED
4 lbs + 10 oz 9 lbs + 4 oz 18 lbs + 8 oz
Chicken Base, No MSG 1 oz 2 oz 4¼ oz
 Monterey Jack Cheese SHREDDED 8¼ oz 1 lb + ½ oz 2 lbs. + 1 oz

Procedure

NOTE: Use gloves to handle peppers. Pepper juice can burn eyes. Wash hands thoroughly with soap and water after handling peppers.

  1. Combine milk and cream soup base. Stir using a whisk until smooth.
  2. In a large soup kettle, sauté turkey in oil until browned.
  3. Add onion and garlic. Cook until onion is tender and minimum internal temperature is 165ºF. (for 15 seconds)
  4. Add green chilies, cumin, oregano, cayenne pepper and cloves. Cook for 2 minutes.
  5. Add cream sauce, jalapeno, beans and chicken base. Simmer for 15 minutes. Minimum internal temperature should be 165º F. (for 15 seconds) or above. Hold hot (140º F or above) for use or cool quickly to internal temperature of 40º F. or below.
  6. As needed for service, add 8 oz cheese to each 1 gallon soup mixture. Stir to melt cheese. Hold hot (140ºF or above) for service.
